Mashed potatoes are made everywhere potatoes are grown. This recipe makes them very tasty.

Potatoes (1)
Salt
Water
Butter
Sour Cream (2)  
Salt
Pepper
Garlic
Milk, whole

Make:   -   (35 min - 25 min work)
  1. Peel Potatoes and cut into large chunks for even cooking. Put the POTATOES (skin-on) in a pot with Water to cover and 1 t Salt. Bring to a boil and set to a high simmer until just cooked all the way through. They are done when a sharp skewer goes through the center of largest one without encountering a stiff spot. Drain and put back into the pot (or run them through a potato ricer back into the pot).
  2. Meanwhile:   Melt Butter and mix thoroughly with Sour Cream (see Note-2), Salt and Pepper.
  3. Mash GARLIC and mix into the Butter mix.
  4. Stir Milk into the pan and bring up hot, but not boiling.
  5. -- Operations below should be done while the potatoes are still hot.
  6. Mash the Potatoes with a Potato Masher (unless you used the ricer).
  7. Work in the Butter mix
  8. Serve garnished with chopped Chives or scallion tops).
  9. Serve hot. If you must hold them use a warm oven. If you must reheat, use a moderate oven. I use my stovetop smoker as a stovetop oven, an electric skillet with cover would also work.
NOTES:
  1. Potatoes:

      Russets are the potatoes you want for mashed potatoes, (or Maris Piper in England - or Agria in France and Italy). These are dry potatoes with a high starch content. Some like Yukon Gold while others despise them for this use (I do). Some allow a mix of Russets and Yukon Gold. For details see our Potatoes page.
  2. Sour Cream

    is optional but recommended. Some cooks use 1/2 cup Cream Cheese in its place. Caught without Sour Cream I've use a Heavy Cream with teaspoon of Lime Juice successfully.
