An attractive and tasty Louisiana salad, with adjustable chili heat - for buffet or picnic, it can be made ahead and will not wilt.

Do Ahead   -   (35 min )
  1. IF using Corn on the Cob: bring plenty of water to a full boil over high heat. Strip husks and hair from the Cobs and toss them in The boiling water. Keep them submerged, and by time the water is back to a boil they're about done. Drain and let cool.
  2. Slice the kernels from the cobs and discard the cobs.
  3. Cut large stems from KALE
  4. Bring 2 quarts of water to a boil and add 2 t Salt and stir in Kale. Cook until tender and bright but not mushy, about 10 minutes. Drain and cool.
  5. When cool, squeeze excess water from Kale. Pile on the cutting board and make cuts at 90° so pieces will be about 1 inch.
Make   -   (35 min )
  1. Cap and seed BELL PEPPERS and cut into about 1/2 inch dice.
  2. Cut TOMATOES into about 1/2 inch pieces.
  3. Dice ONION about 1/4 inch.
  4. Crush GARLIC and chop fine.
  5. Place all Salad items in a large mixing bowl and tumble to mix well.
  6. Pull apart lumps of the chopped Kale and tumble into the Salad until evenly distributed.
  7. Mix all Dressing items in a small jar. Shake up vigorously and pour over Salad. Tumble to coat everything well and refrigerate to cool.
  8. Serve cold. This salad will keep refrigerated in a sealed container for about 3 days.
NOTES:
  1. Kale:

      I strongly prefer Black / Tuscan Kale to Curly Kale, but Curly Kale is much more common here in SoCal.
  2. Corn Kernels:

      In order of preference: Fresh from the Cob, Canned, Frozen.
  3. Cajun Seasoning:

      2 teaspoons makes mild salad with embarrassingly low Chili heat (based on our Cajun Seasoning recipes) so feel free to use more, or add some Chili Sauce. Check out our easy to make Seasoning recipes: Cajun Seasoning #1, or Cajun Seasoning #2, or Creole Seasoning (pretty much interchangeable).
