An attractive and tasty Louisiana Cajun Salad, served cold, cool, or warm, depending on how your are using it. Can be made ahead and is stable for buffet or picnic.

Do Ahead   -   (20 min - 7 min work)
  1. IF using Corn on the Cob: bring plenty of water to a full boil over high heat. Strip husks and hair from the Cobs and toss them in The boiling water. Keep them submerged, and by time the water is back to a boil they're about done. Drain and let cool.
  2. Slice the kernels from the cobs and discard the cobs.
Salad   -   (40 min )   Add ingredients to mixing bowl as you prepare them.
  1. Pour frozen BEANS into a pan and add Water to cover. Bring to a boil, then simmer for 10 minutes to soften them a little. Drain and cool. I cool in several changes of cold water so I can add them to the salad right away.
  2. Drain or thaw CORN KERNELS as needed.
  3. Cut MOZZARELLA into about 3/8 inch dice (see Mozzarella).
  4. Cut TOMATOES in half crosswise. If you have only larger tomatoes dice to about the same size.
  5. Dice ONION about 1/4 inch.
  6. Chop PARSLEY and BASIL small. Mix.
  7. Toss all Salad items together until evenly distributed.
Dressing   -   (10 min )
  1. Crush GARLIC and chop very fine.
  2. Zest LEMON, dark yellow only, then squeeze for juice.
  3. In a small jar, combine all Dressing items. shake vigorously and pour over salad. Tumble to coat well.
  4. Serve cold, at room temperature, or warm depending on how you are using it. This salad will keep refrigerated in a sealed container for about 3 days.
NOTES:
  1. Baby Lima Beans:

      Frozen for convenience.
  2. Black Eyed Peas:

      Frozen for convenience. The pattern recipe called for Acre Peas, but those are a "Southern thing", not available here in SoCal, They are a Cowpea closely related to the Black Eyed Pea, but smaller. For details see our Cowpeas page.
  3. Corn Kernels:

      In order of preference: Fresh from the Cob, Canned, Frozen.
  4. Mozzarella Cheese:

      The pattern recipe called for tiny fresh Mozzarella Cheese Balls, but no fresh Mozzarella was available in the markets I shopped at, so regular Mozzarella was used for the photo example.
  5. Creole Seasoning:

      2 teaspoons makes mild salad with low Chili heat (based on our easy to make Creole Seasoning recipes) see Creole Seasoning.
