So, you need Fish Stock and just don't happen to have a pile of fish heads, fins, and bones on hand? Here in Los Angeles, capital of the Pacific Rim, we don't hesitate to do "Fusion Cuisine". In Asia, stocks often don't match the main ingredient, so Pork or Chicken may be used. I have had great success using a light Pork Broth for Fish Stews. Another very successful way is to use light chicken or pork broth with 1 teaspoon per cup of Thai Fish Sauce. | |||||
