An appetizer pickle of Squid Rings. Easily made from bagged frozen rings, or less easily from dismantling whole squid. Do hours ahead.

Make   -   (40 min - 20 min work + Marinating)
  1. Prepare SQUID. Just thaw rings or see Squid.
  2. Drop Squid into boiling lightly salted Water. Simmer for about 30 minutes or until squid is tender. Drain.
  3. Season Squid moderately with Salt and Pepper.
  4. Squeeze LEMON JUICE.
  5. Chop MINT and PARSLEY small. Measure is after chopping moderately packed.
  6. Crush GARLIC and chop fine.
  7. Mix all Marinade items and pour over the Squid. Bag and marinate in the fridge for several hours to overnight. If in a hurry, marinate at room temperature for a few hours, then refrigerate. They will keep a few days in the fridge.
NOTES:
  1. Squid:

    - Squid Rings are usually available frozen in bags. You could, of course, start with whole squid (about 2-1/2 pounds), skinning, cleaning and cutting - don't discard the tentacles, they can be used in seafood soups and stews. For details see our Cleaning, Cutting & Cooking Small Squid page.
