Do Ahead - (depends)
- Boil POTATOES in their skins until just done. Chill well
for slicing.
- IF using fresh FAVA BEANS, shell them and cook in
salted water until tender. Pop them out of their skins.
- IF using fresh CORN, drop the cob into boiling
water and boil 2 minutes from the time the water returns to a
boil. Cool and shave the kernels off the cob.
Make Salad - (25 min)
- Skin Potatoes and cut into 1/2 inch dice.
- If frozen FAVA BEANS, par boil in salted water until they
return to a boil over high heat. Drain and cool. If single peeled,
you'll have to pop them out of their skins.
- If frozen CORN, thaw. If Canned CORN, drain.
- Dice QUESO FRESCO 1/2 inch.
- Core and seed CHILI and chop fine.
- Tumble All items together.
- Let rest an hour or two for flavors to blend. Serve cool.
