A light and delightful salad with plenty of flavor contrasts. Make the dressing first, so it's ready to keep the apples from discoloring.

Apples (1)
Walnut halves
Blue Stilton (2)
Golden Raisins
-- Dressing
Lemon Juice
Walnut Oil
Apple Cider Vinegar  
Honey
Salt
Pepper blk

Chives

Dressing   -   (5 min)
  1. Squeeze Lemon Juice. Mix all Dressing Items in a small jar.
Salad   -   (20 min)
  1. Core APPLES and cut into about 3/4 inch chunks
  2. Crumble STILTON into about 1/2 inch chunks
  3. Tumble all Salad items together in a mixing bowl.
Serving
  1. Serve cool, but not refrigerator cold.
NOTES:
  1. Apples:

      These are not cooked, so regular eating apples are fine. The pattern recipe suggested Cox's Orange Pippins and Worcester Pearmain, totally unavailable here. I used Fuji.
  2. Blue Stilton:

      Here in Southern California, Blue Stilton is not easy to find and costs around $23 / pound, so you can be forgiven for using some other Blue Cheese.
  3. U.S. measure: t=teaspoon, T=Tablespoon, c=cup, qt=quart, oz=ounce, #=pound, cl=clove in=inch, ar=as required tt=to taste
