A sweet and savory chutney-like pickle used for the Plowman's Sandwich, Plowman's Lunch, etc. Taste is very close to Branston Pickle, but it's lighter in color.

Prep:   -   (1-3/4 hr (all hand diced))
  1. These Vegies should be diced quite fine: RUTABAGA, CARROT, CAULIFLOWER STEM, ONION. Mix all in a 2 quart sauce pan.
  2. Peel and core APPLE and chop coarse. Chop DATES coarse. Squeeze LEMON JUICE. Mix and blend until smooth, than add to the pan.
  3. Add all Flavorings items to the pan.
  4. Combine all Spices items in your spice grinder and grind fine. Add to the pan.
Run:   -   (1 hr)
  1. Over moderate heat, bring to a boil. Turn to a simmer and simmer covered, stirring often, especially near completion. simmer until Vegies are quite soft but still intact, not mushy, probably 1 hour or a bit more. If not as thick as you'd like, simmer a little longer uncovered - keep in mind, you will have less liquid than it looks like while simmering, and it will thicken some as it cools.
  2. Refrigerate when cool, best a couple of days before use. In a sealed jar It'll keep a month or so - watch for mold on top. Small amounts of mold can be scooped off, otherwise discard.
NOTES:
  1. Rutabaga:

      [Swede]   Necessary for authentic flavor, do not substitute.
  2. Spirit Vinegar:

      [Essig Essenz]   This is a 25% to 30% Vinegar. The regular 5% Vinegar will not work. Spirit Vinegar is available from Central/Eastern European delis or from Amazon.
  3. Mustard Powder:

      Use Colman's, most other powders are different.
  4. Comments:

      The original Branston Pickle, still sold, is quite coarse, but their "Small Chunk" is now preferred as a sandwich spread.
  5. U.S. measure: t=teaspoon, T=Tablespoon, c=cup, qt=quart, oz=ounce, #=pound, cl=clove in=inch, ar=as required tt=to taste
