A favorite sandwich in England, a country where sandwiches are the most favored lunch. This recipe (13.8 oz) will make up to 6 sandwiches depending on bread size.

Bread (1)
Butter
-- Filling
White Cheddar, (2)
Red Leicester cheese
Onion, sweet
Scallions
Mayonnaise (3)
Pepper, blk

Filling:   -   Mix as you go   (20 min)
  1. Grate the CHEESES on the large holes of the grater.
  2. Chop ONION very fine, but not food processor fine.
  3. Chop SCALLIONS very fine, white and green.
  4. Mix together all Filling items until evenly distributed.
Assemble:   -   (3 min each)
  1. Butter the bread on the inside of both top and bottom slices.
  2. Spread filling fairly thick, all the way to the edges. The sandwich is then generally sliced in half corner to corner. Slice both ways for buffet service.
NOTES:
  1. Bread:

      Regular square sandwich bread is normally used, usually a light whole wheat, but sometimes white. Crusts are left on.
  2. Cheeses:

      The two cheeses listed are the standard in England. The White Cheddar should be quite sharp. If you have to use cheese that is less salty, add a little salt to the recipe.
  3. Mayonnaise:

      This needs to be full fat Mayonnaise of the best quality. A very reliable brand is Best Foods Real Mayonnaise (branded as Hellmann's Real Mayonnaise east of the Mississippi).
  4. Comments:

      This is a very simple recipe, so quality of ingredients, texture, and ingredient ratios are all very important.
