Green Beans

Prep: - (30 min)
- Tip and Tail BEANS and cut them in half crosswise.
Optionally, You can leave them full length for a mazzeh.
- Scald TOMATOES one minute in boiling water. Quench in cold
water and peel. Cut into 3/4 inch dice.
- Chop ONIONS fine.
- Slice GARLIC very thin.
- Grind together Cumin and Allspice
Run - (30 min)
- In a spacious sauté pan, heat Olive Oil. Stir in
Onions and fry stirring until translucent. Stir in
Garlic and Cumin mix. Fry stirring another 2 minutes.
- Stir in Tomatoes, Salt and Pepper. Cover and
simmer for about 10 minutes, stirring a couple of times. Add a little
water if necessary.
- Meanwhile: Bring a saucepan of lightly salted
water to a boil. Stir in the Green Beans and cook until just
tender. Drain and stir into the sauce.
- Serve warm, or at room temperature, drizzled with ExtV Olive Oil
as desired.
