Soy Vinegar Dipping Sauce

A typical Filipino Dipping Sauce (Sawsawan) for Lumpia and any other grilled or fried foods, and even over rice. It improves with rest time, even overnight.

Soy Sauce
Cane Vinegar (1)
Water
Calamansi Juice (2)
Sugar (3)
Pepper, black
Chili Labuyo (4)
Cucumber (5)
Shallot (6)

Make     (15 min + rest time)
  1. Cut CUCUMBER and SHALLOTS into very tiny dice.
  2. Chop CHILIS very fine.
  3. Mix together All Items. Stir to dissolve Sugar and let rest a few hours for flavors to blend, or refrigerate overnight.
NOTES:
  1. Cane Vinegar:

      Data Puti is my preferred brand. The Philippines produce many very fine vinegars, and their Palm or Coconut Vinegars could also be used. Some use plain White Distilled Vinegar, but if you do, double the amount of Water in the recipe.
  2. Calamansi Juice:

      Available at Philippine markets. It can be faked up with 2/3 Lemon Juice and 1/3 Orange Juice, but just plain Lemon Juice would be OK in this recipe.
  3. Sugar:

      Some recipes use a Light Brown Sugar, some use plain White Sugar. I use Zulka, which has flavor but is even lighter than Turbinado.
  4. Chili Labuyo:

    This is the very hot Chili of the Philippines, but is being displaced by the common Thai Chili which is not as hot but more economical to grow and harvest. For details see our Philippine Chilis page.
  5. Cucumbers:

      Preferably Persian or Japanese or some other small cucumber that doesn't need to be peeled or seeded. If all you have are the standard green blimps, weigh after peeling and seeding.
  6. Shallots:

      Many recipes use Red Onion instead.
  7. Comments:

      The ratio of Soy Sauce to Vinegar is quite flexible, in fact all the ratios are quite flexible.
