Your first taste of this soup will be a surprise, as the spicing will seem unusual to most - but you will very quickly get accustomed to it.

This is a substantial soup with plenty of flavor, so it's more a main dish soup or lunch soup than a soup course soup.

Do-Ahead:   -   (8 hrs - 5 min work exclusive of making broth)
  1. Soak CRUSHED WHEAT in 2-1/2 cups Water overnight or at least 8 hours. Drain.
  2. Toast SESAME SEEDS if you don't have them on-hand.
Prep:   -   (5 min)
  1. Grind all SPICES and mix together. Measure is after grinding, but pretty close to the measure of whole spices.
Run:   -   (55 min)
  1. In a suitable heavy bottomed sauce pan (3 qt), melt Butter. Stir in drained Wheat and cook stirring over fairly high heat for 4 minutes.
  2. Stir in Sultanas and Spice Mix. cook stirring for 1 minute.
  3. Stir in Water and Chick Peas. Bring to a boil, then simmer covered for 20 minutes.
  4. Stir in Grape Molasses and adjust liquid if needed. Simmer another 10 minutes.
  5. Serve hot sprinkled with Sesame Seeds.
NOTES:
  1. Crushed Pelted Wheat:

      [Gorgot (Armenia) / Yarma (Turkish)]   This is whole wheat kernels, lightly pearled and cracked fairly fine. It is available in markets serving ethnic communities from Turkey through the Caucasus and on into Persia, and fairly common in the multi-ethnic markets here in Los Angeles. Whole Pelted Wheat [Dzedzadz (Armenia); Hurled Wheat] could also be used for a different texture.
  2. Grape Molasses:

      [Pekmez (Turkey); Petimezi (Greek)]   This is highly concentrated Grape Must, available in markets serving Mediterranean, Levantine, and Middle Eastern communities.
  3. Sultanas

      Golden Raisins.
  4. Sesame Seeds, Toasted:

      This is a pantry staple from the Mediterranean region on east to Japan and Southeast Asia. Very easy to make by our recipe Toasted Sesame Seeds. The pattern recipe crushed the seeds, but I prefer them whole.
  5. U.S. measure: t=teaspoon, T=Tablespoon, c=cup, qt=quart, oz=ounce, #=pound, cl=clove, in=inch, ar=as required, tt=to taste
