A common fish in fast moving fresh (or sometimes brackish) waters with a worldwide distribution in temperate climates. Pictured is one 12 inches long and weighing 10 ounces (cleaned). Dace is commonly catagorized as a "course" fish and not used much for food in the U.S. or Europe. It can be treated much as carp and in Asia it is often used to make fish balls. Whole fish can be found in Asian markets



The flavor is similar to catfish but a little more delicate. The heads bones and offcuts yield a pleasant fish stock similar to catfish stock. Dace is easy to fillet and a 10 ounce (cleaned) dace will yield 5 ounces of fillet but the flesh contains numerous very fine bones. They're easy to remove if you break up the fillet with a fork but it's a lot of trouble - better to make fish balls.
