A very fine and flavorful breakfast dish of scrambled eggs and vegetables. The name means Parakeet Eggs (reason unknown).

Do-Ahead   -   (50 min)
  1. Make HOGAO. This can be made a couple of days ahead, or just before this recipe.
Prep   -   (9 min)
  1. Beat EGGS well with a wire whisk. Whisk in Salt and Pepper.
  2. Chop CILANTRO small for Garnish.
Run   -   (10 min)
  1. In a well seasoned iron skillet or non-stick pan, heat Oil over moderate heat. Stir in Hogao until sizzling well.
  2. Stir in Eggs mix and let start to set, then tumble frequently until eggs are set but still moist (don't over-cook).
  3. Serve immediately with Cilantro Garnish and Hot Sauce of choice.
NOTES:
  1. Hogao:

      This is a simple non-hot Salsa served everywhere in Colombia. It is easy to make by our recipe Hogao (Salsa Criolla). The recipe makes more than you need here, but don't worry, you'll find other uses.
  2. Hot Sauce:

      My favorite Hot Sauce for this dish (and other egg dishes) is Tabasco. They may not use it in Colombia, but Colombia is a major producer of Tabasco peppers for export to US hot sauce makers, thus "Colombian content".
  3. Alternative:

      This recipe can also be done without pre-made Hogao Sauce (some difference).
    1. Prep Eggs as above.
    2. Scald 13oz Tomatoes 1 minute in boiling water. Chill, skin and chop small.
    3. Slice 1/2 cup Scallions thin crosswise.
    4. Crush 1 clove Garlic and chop fine. Add to Scallions.
    5. Heat Oil as above. Stir in Scallion mix and fry stirring about 2 minutes. Stir in Tomato Mix and fry stirring until Tomatoes are softened, about 5 minutes.
    6. Stir in Eggs and tumble until set but still moist.
