This is an easy BBQ Beef very popular in Korean Homes. It differs some from the restaurant version, but not a lot.

Do Ahead
  1. If you don't have them on hand, toast Sesame Seeds - see Note-2 (10 min).
  2. Make Ssamjang Sauce, see Note-4 (15 min).
Prep   -   (1-1/4 hrs - 20 min work)
  1. Slice the BEEF thin across the grain, up to 1 inch wide and 2 inches long. It helps a lot to put it in the freezer compartment for about 40 minutes to stiffen before slicing.
  2. Crush GARLIC and chop fine. Chop SCALLION fine. Crush Toasted Sesame. Mix all Marinade items. Massage into Beef and set aside to marinate for an hour or more, or even overnight in the fridge.
Run   -   (depends on method, up to 25 min - see Gallery)
  1. Grill Beef. This can be done on a Korean grill plate, an outdoor grill, a Korean or Japanese grill pan, or fried in a skillet. It should be just barely cooked through.
  2. Keep Beef hot and serve with Ssamjang and Lettuce Leaves on the side.
  3. To eat, take a strip or two of Beef and place it on a Lettuce Leaf. Hit it with a good dash of Ssamjang, and roll it up. It is usual to eat it in a single bite.
NOTES:
  1. Beef:

      Use a fairly tender cut of beef. Maangchi recommends Tenderloin, Top Sirloin, or Skirt Steak. I used Chuck, which is what I usually have in the freezer compartment, and it worked fine.
  2. Sesame Seeds:

      Toasted sesame seeds are a Korean necessity. If you don't have them, just dry pan roast white sesame seeds, stirring and shaking, until they are a medium blonde color. For details see our Toasted Sesame Seeds page.
  3. Sugar:

      I always cut the sugar in Asian recipes. Asians are real sugar freaks and make stuff too sweet for my taste. The pattern recipe called for 2 Tablespoons.
  4. Ssamjang Sauce
