Various dips are used for Bôt Chiên, many of them too sweet for Western tastes. This dip is typical, except I've cut the sugar in half to make it more savory.

Soy Sauce
Rice Vinegar (1)
Sugar
Thai Chili (2)
  1. Slice CHILIS very thin.
  2. Mix All Items together and let rest 20 minutes or so, or stir vigorously to get sugar to dissolve. In a small tightly covered jar this will keep a couple of weeks refrigerated.
NOTES:
  1. Vinegar:

      Recipes call for Black Vinegar, White Rice Vinegar, or Red Rice Vinegar. Feel free to choose any of these. I usually use an Aged White Rice Vinegar for dips. For details see our Vinegars & Souring Agents page.
  2. Chilis:

      4 Thai chilis will give this sauce a satisfying bite by Southern California standards. Use your own best judgement here. For details see our Chilis - Thai & Southeast Asia page.
